Pasta with Creamy Sweet Potato Sauce

Preparation
- Cook the sweet potato in the microwave for 10-12 minutes.
- Meanwhile, bring a saucepan of salted water to the boil, cook the Mevalia LP Penne for 5-7 minutes.
- Once the Mevalia LP Penne is cooked, drain and set aside, reserving 50 ml of the pasta water for the sauce.
- Once the sweet potato is cooked, cut in half (be careful as it’s hot), spoon out the pulp and transfer to a bowl.
- Add the butter, garlic, Mevalia LP Lattis, salt & pepper to the sweet potato, whisk until smooth. Add the Mevalia LP Penne and sweet potato into the pan and bring to a gentle simmer, reduce the sauce to the desired consistency.
- Finish with the grated cheese and freshly chopped herbs.
Recipe tips; if the sauce is too thick add a little more Mevalia LP Lattis.
