BLUEBERRY & MANGO MUFFINS

Ingredients
  • Mevalia bread mix 325 g
  • soft light brown sugar 100 g
  • golden syrup 50 g
  • baking powder 2 tsp
  • baking soda 1 tsp
  • soft margarine 100 g
  • veg oil 20 ml
  • pure orange juice 340 ml
  • blueberries 90 g
  • diced fresh mango 90 g
Preparation
12 muffins
  1. Preheat the oven to 200c/180c fan/gas mark 6.
  2. Place the Mevalia bread mix into a mixing bowl then mix the light brown soft sugar, baking powder, baking soda, sugar and syrup with the baking powder.
  3. Add the soft margarine and the orange juice, and using a wire whisk mix quickly for 1 minute until smooth and well mixed.
  4. Stir in the blueberries & mango, coating with a little Mevalia bread mix first (this will stop them from sinking when baking)
  5. Divide the mixture between 12 muffin paper cases set inside a muffin tin.
  6. Bake in a preheated oven 200c for 25-30 minutes until risen and golden brown.
  7. Place on a rack to cool.
  8. The muffins are perfect for freezing.
