BLUEBERRY & MANGO MUFFINS
Preparation
12 muffins
- Preheat the oven to 200c/180c fan/gas mark 6.
- Place the Mevalia bread mix into a mixing bowl then mix the light brown soft sugar, baking powder, baking soda, sugar and syrup with the baking powder.
- Add the soft margarine and the orange juice, and using a wire whisk mix quickly for 1 minute until smooth and well mixed.
- Stir in the blueberries & mango, coating with a little Mevalia bread mix first (this will stop them from sinking when baking)
- Divide the mixture between 12 muffin paper cases set inside a muffin tin.
- Bake in a preheated oven 200c for 25-30 minutes until risen and golden brown.
- Place on a rack to cool.
- The muffins are perfect for freezing.
