Bubble & Squeak Patties

Preparation
- Microwave the celeriac or sweet potato until soft, approximately 15-20 minutes.
- When cool scoop out the flesh and put into a medium mixing bowl.
- In a frying pan stir fry the onion and cabbage with the butter until soft.
- Add the onions, cabbage, smoked paprika, curry powder, salt, pepper and 15g MEVALIA Bread Mix to the celeriac or sweet potato
- Beat together until it forms a soft paste.
- Lightly dust the surface with MEVALIA Bread Mix and divide the mixture into 6 and shape into patties.
- Add a little oil to a frying pan and fry on each side over a medium heat for 3-4 minutes or until golden brown.
Hints and tips:
You can adapt any of the vegetable ingredients for exchanges, peas or broccoli would work well too.
❅ Suitable for freezing, place the patties on greaseproof paper to keep from sticking together, once frozen place them into an airtight container and use within 6 months. To reheat, cook from frozen and fry on each side for 3-4 minutes.
