Chewy Chocolate Cookies
Preparation
Recipe for 12 portions
- In a large bowl, whisk together the sugars, salt and butter into a smooth paste.
- Whisk in the LP Egg Replacer and vanilla bean paste.
- Sift in the Mevalia Bread Mix and baking soda, beat the mixture with a wooden spoon, slowly adding the MEVALIA Lattis/ ProZero as you continue to mix.
- Fold in the MEVALIA Chocotino/ Vitabite, chill the dough for at least 1 hour. The longer you leave in the fridge the better the cookie will taste (maximum 48 hours).
- Preheat the oven to 180°C /160°C fan /gas mark 3. Line a baking tray with parchment paper.
- Scoop the dough onto the parchment, leaving at least 10cm of space between each of the 12 cookies and 5 cm of space from the edges of the tray so that the cookies can spread evenly.
- Bake for 15-20 minutes, or until the edges have just started to brown.
- Whilst the cookies are hot you can reshape them if uneven.
- Leave to cool before eating. Store in an airtight container.
