Chocolate & Banana Loaf
Preparation
- Preheat an oven to 180°C/ 160°C fan/ gas mark 4.
- Line a 2lb loaf tin with greaseproof paper and set aside.
- Place the Mevalia LP Bread Mix, LP egg replacer, baking powder and baking soda into a medium sized mixing bowl, mix well.
- In a food processor or blender, blitz the banana, MEVALIA Lattis/ ProZero and sugar until smooth.
- Combine the two mixtures and beat into a smooth firm batter before adding the MEVALIA Chocotino/ Vitabite pieces, mix until fully combined.
- Pour the batter into the loaf tin and level with the back of a wet spoon.
- Bake for 50-60 minutes until a skewer inserted into the middle comes out clean.
- Once the loaf is cool, melt the remaining MEVALIA Chocotino/ Vitabite in the microwave for 1-2 minutes before drizzling over the top. Allow to set before serving.
Recipe tips; this banana loaf is suitable for freezing. Place in an airtight container before freezing and use within 3 months.
