Guacamole Toasted Sandwich

Preparation
- Halve and remove the stone from the avocado.
- Into a bowl, scoop out the avocado and mash with a fork until soft.
- Mix in the diced onion, garlic, chilli, coriander, lemon juice, cumin, salt and pepper.
- Butter each slice of Mevalia LP Pane Casereccio, turn 2 slices over so the butter side is facing down. Divide the avocado mix between the two slices, before layering with the cherry tomatoes, cucumber slices and finely sliced onion. Place the remaining slices of Mevalia LP Pane Casereccio on top with the butter side facing upwards.
- To cook, warm a large frying-pan over a low - medium heat, carefully place each sandwich in the pan and cook on each side for 4-5 minutes. Cut in half and serve.
Recipe tips; if using a George Foreman grill or similar, reduce the cooking time to 4-5 minutes in total.
