Thai Jack Cakes & Spicy Mayo

- tinnes Artichokes drained, finely sliced 90 g
- tinned Jackfruit drained, shredded 40 g
- spring onions, thinly sliced 1
- chopped fresh coriander ½ tbsp
- MEVALIA breadcrumbs* 25 g
- Thai green curry paste 1 tbsp
- soy sauce 1 tsp
- lime juice ½ tsp
- sesame oil 1 tsp
- LP Egg Replacer ½ tsp
- MEVALIA Bread Mix 1 tbsp
- vegan mayonnaise 2 tbsp
- Coating
- chilli sauce 1 tsp
- watercress handful
- spring onions, thinly sliced 2
- Spicy mayo & garnish
- salt & pepper
- Vegetable oil
- LP Egg Replacer ½ tsp
- red chilli, finely diced ½
- MEVALIA breadcrumbs* 50 g
- MEVALIA Lattis/ ProZero 30 ml
Preparation
- Place all the ingredients for the filling (minus the bread mix) into a large mixing bowl and mix well.
- Slowly combine together until it forms a sticky consistency.
- Dust the worktop with MEVALIA Bread Mix, split the mixture into 4 and shape to make cakes, making sure each side is coated with the flour.
- Chill in the fridge for at least 20 minutes.
- Meanwhile prepare the coating, in a small bowl whisk the MEVALIA Lattis/ ProZero and LP Egg Replacer together until smooth, season to taste.
- Place the MEVALIA breadcrumbs* into similar sized bowl.
- To coat the cakes, dip each cake into the MEVALIA Lattis/ ProZero mixture, then into the breadcrumbs, making sure they are coated well.
- Shallow fry for 3 minutes each side.
- Serve the Thai Jack cakes with the spicy mayonnaise and salad garnish.
*To make the breadcrumbs simply grate a frozen Mevalia LP Mini Baguette
