ITALIAN SWEET POTATOES

Ingredients
  • Sweet potatoes peeled and diced 500 g
  • MEVALIA BREAD MIX 1 tbsp
  • Olive oli 50 ml
  • Garlic, finely chopped 2 cloves
  • Fresh rosemary, chopped 1 sprig
  • Fresh thyme, chopped 1 sprig
  • Fresh parsley, chopped 1 sprig
  • Sea salt 1 tbsp
  • Ground black pepper 1/2 tsp
  • Cherry tomatoes, halved 12
Preparation
4 x portions

Preheat the oven to 180°C/160°C fan/gas mark 4.

Toss the sweet potatoes with the MEVALIA BREAD MIX in a mixing bowl.

Add the olive oil, garlic, fresh herbs, salt and pepper, making sure the potatoes are fully coated.

Place in a roasting tin and roast in the oven for 25-30 minutes, half way through the cooking and add the cherry tomatoes.

To serve drizzle with a little olive oil and fresh parsley.
