THAI JACKFRUIT & VEGETABLE CURRY

Ingredients
  • MEVALIA rice 160 g
  • water 2l
  • Juice and zest of a lime
  • Olive oil
  • Upton’s Thai curry jackfruit 1 packet
  • Shallot finely diced
  • chilli finely diced
  • Coriander leaves to garnish (optional)
Preparation
serves 2

Place rice in a pan with 2 litres of water along with the zest and juice of a lime and boil for 9-11 minutes.

Heat the oil in a pan, add the jackfruit with the remaining ingredients and cook for 8-10 minutes, stirring regularly. Adding a splash of water if it starts to stick.

Drain the rice and serve with the curry. Garnish with the coriander leaves.
